Ichiro Akuto , grand-son of the founder of Hanyu distillery (closed in 2000) , decided in 2007 to build a new whiskey distillery in the town of Chichibu 100 kilometers northwest of Tokyo. The know-how and the expertise accumulated over time and transmitted by his grandfather allows him to produce surprisingly complex whiskies despite their lack of maturity.
The port pipe is a european oak barrel which has the distinction of having served in the maturation of port wine . Ichiro Akuto has been able to provide one for the maturing of this whisky . Distilled in 2009, the Port Pipe is first aged 3 years in quarter cask and some was put into a port pipe for a further year of maturation before being bottled in 2013. The other part has continued its aging in quarter cask, and was bottled at the same time as the Chibidaru .
During this refining in port pipe, the whisky will soak shades of pink left by the Port wine but also some aromas of sweets that make it a very surprising whisky that will appeal to japanese whisky novices and fans.
